Watch the full video on YouTube New World vs Old World Chardonnay: how New Zealand wine took on the establishment, plus Geoff Scott's simple snapper and mushroom cooking. In this episode of our "prodcast" (thank Geoff for that piece of audio gold), chef Geoff Scott and Scott Wilson explore Chardonnay, the ultimate example of provenance. It's the same grape grown in different regions, and each has its own identity. Will the Scotts pick a favourite? In the kitchen, Geoff brings the Ratatouille "anyone can cook" philosophy, settles the wash-or-wipe mushroom debate, and shares his best tip: keep it simple and don't do too much. We finish with our Sticky Questions, so you'll leave knowing how to be the perfect dinner guest. The wines: Queen of Swords Chardonnay from the very talented Ashleigh Barrowman at Siren Wine , as well as the Dicey Chardonnay from one of Scott’s favourite wine makers Matt Dicey. Again our wines were chosen from By the Bottle , our favourite little local in Mt Eden. The food: Ora’s Farm Mushrooms and freshly caught snapper – a big shout-out to Callum, mate of Geoff’s son Sam for the kai moana of Whakatāne. NZ Chardonnay royalty: Michael Brajkovich, the GOAT from Kumeu River Wines , Tony Bish of Fat & Sassy fame, and Helen Masters from Ata Rangi . A special mention to friend of the show Kristy Sze, award winning ice cream maker at First Mates Last Laughs for her part in the potato chip and wine matching debate. SAVVY ABOUT SPRING: In this episode the Scott’s get Savvy about all things Spring Time in Aotearoa - we discuss the provenance of Sauvignon Blanc, and the seasonal produce of Spring. Find out what 65% of us experience when eating asparagus, which Savvys are best paired with salty chips, discover how iconic Cloudy Bay Sauvignon Blanc came to be, and indulge in one of New Zealand’s great delicacies, whitebait, towel-dried and freshly filleted into glorious fritters. The Scott’s found that Sauvignon Blanc is not just a one trick pony! We pose a couple of sticky questions to round out the episode, and one question receives an overwhelmingly unanimous response. This week we feature The Ned 909 Wine from Brent Marris at Marisco Family Vineyards , Te Kairangi Estate Sauvignon Blanc , Three Fates Sauvignon Blanc which was purchased from By the Bottle , our favourite little local in Mt Eden. AGEING (DIS) GRACEFULLY: Welcome to this, our first episode of Great Scotts - Join us for the great ageing debate as we discover whether food and wine really do age gracefully - or whether some things are better enjoyed sooner rather than later. In our mission to answer this age-old question, you can expect plenty of laughs along the way. Geoff uncorks a surprise find from his ‘cellar’ and we get an unexpected lesson on wine opening involving a candle and a wet feather PLUS, we introduce the “WANK” button which we don’t expect to be using too often! This week we feature Mt Difficulty Pinot Noir , thanks to Matt Dicey at Dicey Wines plus some delicious cheeses including Mt Eliza Blue Monkey . This is your chance to meet The Great Scotts - Scott Wilson (Wine Scott) and Geoff Scott (Food Scott). Join our hosts as they share tales of where they came from and how they began their journey with wine and food. We look at provenance and what that means, starting with the boys ‘cracking’ open a bottle of Scout Wines Riesling . According to Scott, Riesling is the Sommeliers greatest friend. Scott picked this one up at our favourite local wine store By the Bottle in Mt Eden, Auckland – what a find! Scott shares his tips for chilling down a bottle of champagne in a hurry, opening a stelvin cap correctly (yes, there is a right way) and we hear how they’ve both rubbed shoulders with Gordon Ramsay. Geoff heads down memory lane to the time he swore off oysters for several months after an ill-fated oyster gathering trip to Bluff and The Scotts sample a very unexpected gelato pairing as Geoff explains what the difference between gelato and ice cream is. From iconic chefs and winemakers to emerging producers and artisans, Great Scotts celebrates the people, the craft and the connections that make great food and wine possible.
