Long before YouTube, cookbooks, and the chuck wagon, I took a job in New Mexico’s Gila Wilderness guiding elk hunters and serving as the camp cook. The truth is, I did not know much about outdoor cooking when I started, but necessity is a great teacher. I never wanted to be on TV. I just wanted to cook for cowboys. But one phone call, while on a ranch, changed all of that. This is how I went from a cowboy ranch cook, to cooking on national TV. I was standing in a pasture in North Texas when a car pulled up mid-shot and Bobby Flay walks right into my scene. I didn't know who he was. Didn't know he was coming.
