Back in the heyday of craft beer, everyone was hoping to get bigger. Opening a brewery was about large scale growth, ideas of grandeur and big corporate buyouts. Nowadays, those dreams are essentially gone and breweries are now deciding what is the best way forward. With all the doom and gloom now, we talk to two brewery owners about what staying small means in today’s world: one who is “growing down” his business to be more nimble in today’s world and one who is deliberately staying small, focusing more on beers he wants to brew while brewing beers for his community and taproom. This Episode is Sponsored by: Hopsteiner Let’s talk brewhouse efficiency: Replacing pellet loads with Salvo cannot only boost aroma density, but reduce trub load and increase beer wart. Seems like simple math, but if it is still not obvious— replacing pellets with Salvo can give you MORE BEER per batch with BETTER brewhouse efficiency. Salvo —designed for brewers who are tired of sacrificing yield for aroma Explore flavor solutions at shop.hopsteiner.com . Hops are an agricultural product. That means they are subject to weather, climate and terroir. Sometimes those year-to-year differences are subtle, but in years of wildfires or drought, differences can be dramatic, if not in the hops themselves, then in their prices. By using advanced hop products, and by using hop blends, brewers can achieve greater consistency and predictability in flavor. Blending can also help add complexity and achieve balance in flavor. As an added benefit, brewers can enjoy cost savings. It’s an approach with multiple benefits. This Episode is Sponsored by: Hopsteiner This episode is brought to you by Hopsteiner and Alora™ hops. If you're looking for the next breakthrough aroma variety, Alora delivers. With 5 times more bound 3MH thiol precursors than Cascade hops , Alora gives brewers incredible potential for unlocking vibrant tropical and citrus character. Add in a unique oil profile featuring over 50% selinene—and you get expressive notes of peach, apricot, yuzu, and sweet melon. Discover otherworldly flavor with Alora™. In this episode, we’re doing something different. John Holl, the editor of All About Beer and the producer of this show, is going to join Jeff to discuss iconic beers. Now that we've recorded 7 episodes of the show, it's worth taking a step back and considering the concept of a classic or iconic. We're also going to discuss storytelling and the way a good iconic beer has something to say. With history, agriculture, brewing processes, wars, laws, and even marketing, iconic beers have rich stories. It's the job of the brewery to make a great beer, but we're tasked with finding the reason that beer matters. You'll get a demonstration of this process midway through the show as John makes the case for an unlikely icon, so listen for that. And looking forward, we're in the process of lining up a slate of future shows, so expect the story of another iconic beer next month. Cream ale is a truly American beer style. Reflecting the agriculture of the northeast where the style originates, cream ale showcases corn and high diastatic power malt. In many respects, it is a simple beer: regular corn, simple malt and light hopping. But its simplicity is its superpower. Cream ale is an easy-drinking beer that remains a regional favorite to this day. Comparisons to German helles are not inapt. Far from bland, an annual cream ale festival showcases the art of this American classic. American IPAs have been brewed up and down the West Coast for over 45 years. In that time, they changed a lot. One of the most important moments for the style's evolution came in 1999, when Russian River released an early example of a double IPA. Pliny the Elder used techniques we now consider completely standard, but which were uncommon and even controversial then. In today's episode of One Iconic Beer, we hear from the beer's creator, Russian River co-founder Vinnie Cilurzo, and another West Coast legend, former Stone brewmaster and author of the book IPA , Mitch Steele. They tell the story of Pliny the Elder and the development of IPAs in the United States. Visit AllAboutBeer.com for more podcasts, to read original articles, and to get info on upcoming events. It’s the most wonderful time of the year: Oktoberfest season! What started with a Bavarian royal wedding and horse race has turned into one of the biggest parties on the planet with tents, games, rides and most importantly, beer. But what are the differences between the way Germans brew the beer for Oktoberfest and how other countries do it? What about differences in parties, culture, food, and music? This month on the All About Beer podcast, we talk to a brewer at the classic Munich, Germany based Hofbrau about their brewing practices for their very popular festbier and Chicagoland adjacent brewery Goldfinger about how they keep Bavarian tradition alive as well as create their own spin on the classic beers of this celebrated season. Prost! One beer “gave us a vocabulary that includes the word pilsner for a style of beer, the word pilsner for a type of malt, and the word pilsner for a type of glassware,” observes the Prague-based writer Evan Rail. “No other brewery has had that type of impact,” he concludes. He isn’t exaggerating. It’s hard to argue that any other brewery or beer has had a greater impact on the world than Pilsner Urquell, the subject of this episode of One Iconic Beer. Among the first golden lagers ever made, it would soon spark a wave of imitators that would spread around the world, a legacy we can see in every pub and store that servers beer. How did a brand-new brewery located in a small Bohemian town with no history of making lagers pull off this trick? And what was so special about the original pilsner that has allowed it to flourish for nearly two centuries? We’ll hear from Rail, who has written more extensively about Czech beer than any English-language writer, about the breweries origins and its development over decades filled with revolution, war, and turmoil. We also hear from Kamil Ruzek, a brewer who has spent the past 24 years at the brewery. He takes us into the brewery and shows us how things work. Join us for the remarkable story of the world’s most influential beer on this episode of One Iconic Beer.
